Kafta ala Jen

  • 1 pound ground beef, at least 20% fat
  • 3 medium cloves garlic, minced on a microplane grater 
  • ~1/4 cup onion, grated on the largest holes of a box grater (squeeze out excess liquid)
  • ½ cup of parsley, finely chopped (optional if you are going more authentic)
  • 1 tablespoons chili garlic paste
  • 1 teaspoon kosher salt (or ¾ teaspoon fine sea salt)
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika 
  • ½ teaspoon red chili flakes
  • ½ teaspoon black pepper
  • 1/4 - ½ tsp allspice (optional if you are going more authentic)


Set your oven to Broil (High) and place an oven rack 4 to 6 inches directly under the heating element. 

Line a baking sheet with foil and set a wire cooling rack inside it. 

Toss the ingredients into the bowl of a stand mixer. With the mixer running on low speed, combine the ingredients together.

Divide the meat mixture into 8 balls. Shape each portion around the length of a metal skewer, then place them all on the wire rack, and broil for 4–5 minutes per side until charred on the edges.
