Christmas Lasagna

 Ingredients 


Enough noodles for 3 layers; about 12 (some will have to be cut)


Sauce:


2 28 oz cans crushed tomatoes 

1 onion

1 stick butter

4 T oil

Pinch red pepper flakes

Salt

Garlic powder


Cottage cheese mixture*:


24 oz container cottage cheese

1/2 cup Parmesan

2 beaten eggs


Cheeses:


2 1 lb. Polly-O mozzarella

9-12 oz. fontina


Directions 


Sauce:


Simmer first 5 ingredients over medium-low heat for 90 minutes. Towards the end, add salt & garlic powder to taste.


Cottage Cheese Mixture*:


Blend everything in a food processor.


Cheeses:


Shred.


Assembly:


  1. Preheat oven to 325.
  2. Spray 11x14 pan with Pam. Place sauce in the bottom.
  3. Layer: noodles, sauce, cottage cheese mixture*, & cheeses.
  4. Layer: noodles, sauce, cottage cheese mixture*, & cheeses.
  5. Layer: Sauce and cheeses.
  6. Bake covered for 40 minutes. Uncover & bake 20 additional minutes.
*You will not need all of the mixture. There will be some leftover.
