Cooking Navy Beans
Brine dry beans: Brining Formula: For 1 pound of dried beans, dissolve 3 tablespoons of table salt in 4 quarts of cold water. Soak the beans at room temperature for 8 to 12 hours. Drain and rinse them well before using. (from Cook’s Illustrated)
Rinse beans. Place in crockpot. Add 1 tsp sea salt per pound of beans. Fill crockpot with cold water—enough to cover beans with 2”.
Add a few cloves of garlic and some hunks of bacon.
Cook on low for 12+ hours.
